Our products are handmade every day from scratch using unbleached and unbromated flours. We use organic flours from local mills to ensure the best nutrition and flavor.


  • Banana Bread

    You'll go bananas over our banana bread, baked with pecans, ready for a sweet snack or to try with your breakfast.

  • Ciabatta Bun

    The Italian response to the French baguette, this bread has a very thin crust and a super light and open crumb.

    Made with lard, as is tradition, this bread is shaped similar to a baguette, is slightly sweet, and has a bit heavier crumb that stays moist because of the fat and pre-fermented dough.

How it’s made

Our Process

We start our day early in the morning, usually around 5 am. Ovens are turned on, croissants that have been slowly proofing overnight are baked, cold fermented doughs are baked, sourdough bread is mixed, and Gamble Creek & AMI Farmer’s Market items are baked-off.

At 1 pm, the bread second shift begins. Focaccia, ciabatta, hemp crisp breads, and bun production begins. All doughs are mixed, proofed, shaped, and baked. Cleaning tasks that have been assigned are done while the bread is proofing. After being baked, the breads are cooled, sliced, and packaged to be ready for delivery the next morning.

  • Our breads are made with no additives or preservatives so one- or two-days max except for the miche which will last up to 4 days.

  • All our breads can be frozen to preserve shelf life. Yeasted bread (focaccia, ciabatta) and quick bread (Banana bread, zucchini bread, cornbread, pumpkin bread, blueberry muffin, lemon poppyseed muffin, morning glory muffin, coffee cake) should be stored in a covered container or plastic bag.

    Sourdough bread (miche/baguette) should be stored in paper bags to preserve the crust or left out with no cover and toasted after one day.

  • We currently do not have any gluten-free breads. The ciabatta, focaccia, miche, and baguettes are vegan.
